## iNSTRUCTIONS

**1. Pop the amaranth**

If using unpopped amaranth, heat a dry skillet over medium-high heat. Add about ½ tablespoon amaranth at a time. Cover and shake the pan until the grains pop, about 10 to 15 seconds. Remove immediately to prevent burning and repeat in small batches.

**2. Mix the binder**

In a medium bowl, stir together the peanut butter, sweetener, and cinnamon until smooth.

**3. Combine**

Fold in the popped amaranth and any additional add-ins until evenly mixed.

**4. Shape**

Roll the mixture into small balls, about ¾ to 1 inch in diameter.

**5. Set**

Refrigerate for 15 to 60 minutes to firm up before serving.
