iNSTRUCTIONS
Power Bowls
- Cook SIMPLi Red Quinoa following the instructions in our cooking guide.
- Prepare the SIMPLi Black Beans according to our cooking guide. Once cooked, simmer them on low heat with ½ cup of filtered water and ½ cup of chopped red onion for 20-25 minutes. Stir in 3 tablespoons of SIMPLi Spice Salt and continue simmering for another 10 minutes.
- Cook SIMPLi Chickpeas using our cooking guide. Once done, transfer them to a lined baking sheet and season with 2 tablespoons of nutritional yeast, 1 tablespoon of paprika, a pinch of salt and pepper, and 2 tablespoons of SIMPLi Spice Salt. Roast for 20-25 minutes at 400°F. Let them cool to achieve a crunchy texture.
- Chop the sweet potatoes into bite-sized pieces. Drizzle with olive oil, salt, and pepper. Roast at 400°F for 25 minutes until tender and lightly caramelized.
- Chop the kale and massage it with olive oil, fresh lemon juice, and a pinch of salt to soften it and enhance its flavor.
Lemon-Tahini Dressing
- Combine tahini, freshly squeezed lemon juice, SIMPLi Extra Virgin Olive Oil, maple syrup (optional for sweetness), minced or grated garlic, water, SIMPLi Pink Salt, and pepper.
- Whisk until smooth and creamy, adjusting the water to achieve your desired consistency.
Assembly
- In a bowl or meal prep container, layer the kale, roasted chickpeas, simmered black beans, roasted sweet potatoes, and cooked quinoa.
- Drizzle generously with the lemon-tahini dressing.
- Top with chopped fresh cilantro or sliced avocado, if desired.
- This recipe yields 6-7 power bowls, perfect for meal prep.
