iNSTRUCTIONS
- Cook the Farro: Place the rinsed SIMPLi Regenerative Organic Certified ® Farro in a medium pot with stock or water. Bring to a boil, then reduce heat and simmer for 25–30 minutes, until tender with a slight chew. Drain any excess liquid. Toss farro with 1 tablespoon of the vinaigrette and let cool slightly.
- Prepare the Citrus: Cut the peel and pith from the cara cara orange, blood orange, and grapefruit. Working over a large bowl to catch the juices, cut between the membranes to release the citrus segments (supremes). Squeeze the remaining membranes to extract juice, reserving about 2 tablespoons for the dressing. Set fruit aside.
- Make the Dressing: In a small bowl, whisk together the reserved orange juice, red wine vinegar, olive oil, shallot, and honey. Season with salt and pepper to taste.
- Assemble the Salad: In a large mixing bowl, combine the cooled farro, arugula, fennel, and red onion. Add the dressing and toss well to coat. Gently fold in the citrus segments.
- Serve: Transfer to a platter or bowl, top with toasted pistachios, and serve immediately.
