iNSTRUCTIONS
- Soak SIMPLi Gigante Beans overnight (8+ hours). Drain and rinse, then simmer in a pot with fresh water, a splash of oil, salt to taste, and 2 bay leaves until tender. Reserve cooking liquid (bean broth).
- In a large skillet, heat cooking oil over low-medium heat. Add diced shallots and sauté until lightly golden and fragrant. Meanwhile, toast your sourdough slices.
- Stir in the cooked beans and reserved bean broth. Bring to a simmer, then mix in nutritional yeast, lemon juice, miso paste, thyme, chili flakes (if using), salt, and pepper.
- Toss in broccolini and cook for 2–3 minutes until tender but still vibrant.
- Pour into a bowl, drizzle with finishing oil (try field garlic infused oil for extra flavor!), and serve with warm sourdough for dipping.
