iNSTRUCTIONS
- Bring the vegetable stock to a boil and add the amaranth and peas. Salt the stock if it is not already seasoned. Cover and cook for 20 minutes or until the water is absorbed.
- Meanwhile, boil the potato under tender. Remove the skin and mash it.
- In a food processor, roughly pulse the coriander leaves, roasted peanuts, and green chilies. You don't want to make a paste. Just hand-chop them if you so choose. Mix it with the amaranth, peas, and potatoes.
- Add SIMPLi pink salt, pepper, and cumin seeds. Roll into equal size balls and slightly flatten them.
- Heat the ghee until it's very hot and add the fritter to the pan. Let it sizzle and crisp up on one side and then flip them over. They take about a minute on each side.
- Serve immediately with a drizzle of oil, a sprinkle of salt, a sprig of mint and our simple yogurt dip (just mix together all ingredients).

Vada are savory fried snacks native to South India, which inspired us to create this recipe with a nutritious and seasonal spin. Our recipe combines vibrant spring peas with creamy mashed potatoes, zippy green chiles, crunchy peanuts, and SIMPLi Amaranth which adds a hearty texture to the fritters.
Unlike the original recipe which uses amaranth leaves, we used amaranth seeds for a heavy dose of plant-based protein, fiber, vitamins, and minerals, not to mention a deliciously nutty flavor. We also used SIMPLi Peruvian Pink Salt for seasoning, and we pan-fried the fritters with SIMPLi Olive Oil Blend so you get all the benefits of the healthy fats and antioxidants from our Extra Virgin Olive Oil and the high smoke point of our high oleic Sunflower Oil.
